5 Vegetarian Dishes For Any Celebration

Garbanzo / Chana Kofta Biryani –

Passed down through generations from the Nawabs, this dish is a royal rendition of the traditional Biryani rice. Chana Kofta Biryani is a layered rice dish with a scrumptious Chana Kofta gravy topped with seasoned, flavorful Basmati rice. To make this special biryani, you will need:

For the rice:

  • 1 cup washed and drained Basmati rice
  • 2 Bay leaves
  • Cloves
  • Salt to taste

For the toppings:

  • 2 tbsp warm Milk
  • a few Saffron strands
  • 1 tbsp chopped Mint leaves

How to cook: 

  • Boil the rice with all the other ingredients for around 10 minutes while stirring occasionally. Strain the rice and keep it aside.
  • Combine all the ingredients for the Kofta balls and blend them into a paste using water as required. Make small Kofta balls. Heat the oil and fry until golden brown.
  • Boil the tomatoes until the peel comes off. Blend them into a smooth puree. Heat the oil, add the tomato puree, spices, and other ingredients and cook for 2 minutes. Add the fresh cream and mix well. Cook it for a minute while stirring occasionally. Add the Kofta balls to the gravy and let it cool down.
  • To assemble the Biryani,
    • Spread half of the rice on a greased baking sheet.
    • Then, spread the Kofta gravy over it.
    • Spread the rest of the rice over it.
    • Mix the milk and saffron together and pour the mixture over the rice. Then, sprinkle the mint leaves on top.
    • Cover it with aluminum foil and bake at 400 degrees for 10 minutes.
  • Your Garbanzo Kofta Biryani is ready to serve.

Paneer Tikka

Paneer Tikka, one of the most popular vegetarian dishes, is a great way to start off any Indian meal. The cottage cheese cubes and veggies are marinated in authentic spices and are grilled to perfection. Make Paneer Tikka with just these few ingredients:
  • ½ cup diced Onions
  • ½ cup diced Capsicum
  • 1 cup cubes of Paneer (cottage cheese)
  • ½ cup thick Curd/ yogurt
  • 2 tsp Tikka masala
  • 1 tbsp Lemon juice
  • 3 tsp Sunflower oil
  • Salt to taste

How to cook: 

  • Add the tikka masala, oil, cubed cottage cheese, and vegetables to the curd and mix well until everything is well-coated.
  • Cover the marinated cottage cheese and vegetables and refrigerate for 30 minutes.
  • After 30 minutes, insert a wooden skewer into the marinated cottage cheese and vegetables.
  • Grill the Paneer Tikka and serve hot!

How to cook:

  • In a large pot, heat up the oil and add all the spices to it. Once the spices begin to sputter, add the onions, chilli, and saute it well.
  • When the onion turns golden, add the ginger-garlic paste. Once it cooks a little, add all the remaining vegetables and mint leaves. Saute for 2-3 minutes.
  • Then add 3 cups of water, salt, and bring it to a boil.
  • Next, add the rice and cook on a low flame with the lid on. Cook until the water dries up and the rice is cooked.
  • Let it cool for 10 minutes and serve with some Boondi raita.

How to cook:

  • Grind the moong dal into a coarse paste.
  • In a pan, heat the oil and the spices. Once they begin to sizzle add the dal paste.
  • Saute until well-cooked and keep it aside to cool.
  • Add the oil and salt to the flour and knead the dough using cold water. Make small dough balls and cut them in half and shape them into cones.
  • Fill it with the stuffing, fold it up into a samosa, and deep fry until golden brown. Serve hot!

  • Roll into ball-shaped ladoos and serve!
