Method

Preparation of the Batter:

  • Mix the rice flour, salt, and water into a thick batter and keep aside for about 30 minutes.

 

Preparation of the Filling:

  • Mix all the ingredients for the filling and set aside to make a thick batter.

 

Preparing the Patoli:

  • First, rinse the turmeric leaves well several times and drain the water.
  • Now, wipe every leaf dry with a kitchen towel so there are no water droplets on them.
  • Smash the middle vein of the leaf lightly using a pestle, or just slice it thinly with a knife. Make sure not to break the leaf.
  • Next up, you have to cut the base stalk of the leaf.
  • Then, evenly spread the rice flour batter on the leaf and add the filling in the center.
  • Either vertically or horizontally, fold the leaf gently and press the edges.
  • Now, Steam the Patoli on medium heat for about 10 to 12 minutes till the rice layer becomes firm and well-cooked.
  • Serve the delicious Patoli with some coconut milk, plain milk, or ghee.
