Method

  1. Get the chutneys ready in separate bowls and keep them aside.
  2. Boil the potatoes in a pressure cooker, pan, or instant pot.
  3. Once done, let them cool, peel, and chop into small cubes and keep aside.
  4. Finely chop the Onion, Tomato and Coriander Leaves, and keep aside.
  5. Next up, take the curd, beat it with a whisk until smooth, and set aside.
  6. Now, take a plate and arrange a set of Puris or Golgappas.
  7. Carefully press the center of each Puri with your thumb to break and create space for the fillings.
  8. Then, one after the other, put the Potatoes, Onions, and Tomatoes inside the Puris.
  9. Now, to add more flavor to the stuffing, sprinkle some Chat Masala, Cumin Powder, Salt, and Chilli Powder.
  10. Next, top the stuffed Puris with the three chutneys as per your taste.
  11. Add the Curd to the Puris, and again sprinkle the spices and salt as per taste.
  12. Finally, add sev over your Puris so they get covered.
  13. Garnish with Coriander and serve immediately to prevent the Puris from getting soggy.
